I Love this mix….the perfect vegan chocolate. Not too sweet and due to not much coconut oil it doesn’t melt too quickly and with the added almonds is a healthy meal all on its own! You can safely give this to the kids after dinner and you know it’s completely good for them.
3/4 cup raw almonds, or cashews or hazelnuts…any raw nut will do
1/3 cup unsweetened shredded coconut
1/3 cup cacao powder
1 1/3 cup dates (medjool are the best)
1/3 cup organic coconut oil
1 tblspn maple syrup
5 drops doTERRA Wild Orange Essential Oil
1 tspn vanilla
a pinch of himalayan salt
HOW TO MAKE IT?
Combine the almonds, coconut and cacao in a food processor until the almonds are nicely ground up. Remove and set aside in a separate bowl.
Place the dates in the food processor and process until they become a paste then add the almond mix and the remaining ingredients and process away until they are all nicely combined.
Place the mixture into a dish lined with baking paper and press down firmly.
Place in the freezer and when its a little hard cut into bite sized pieces.
Place in an airtight container in the fridge or freezer.
