This is the best quick lunch I know of, the ingredients are basically anything you have in your fridge (but be a bit choosy – I have had some disasters while playing around with ideas)

Ingredients for the Really Quick Raw Vegetable Lunch

  • 1 Apple chopped
  • 1 Carrot, chopped

    Easy Raw Vege Lunch

  • 1/2 Zucchini, chopped
  • 1/2 Capsicum (red or green), chopped
  • a handful Spring Onions, sliced
  • Juice from 1 Lemon
  • 3/4 cup raw cashews
  • some fresh herbs, also chopped

How?

This is so easy it’s ridiculous!!

Just put EVERYTHING in the food processor and zap it for about 10 secs….and check…. if it looks like the picture you have done enough. If not zap it some more…and repeat.

DON’T over process, it’ll turn into a puree….it’ll turn to mush.
