Ingredients for the Perfect Vegetable Barbeque
- 1/4 Pumpkin, chopped
- 1/2 punnet Baby Tomatoes
- 1 Zucchini
- 6 Mushrooms
- 1/2 Red Capsicum
- a small handful Coriander (or your herb of choice)
- salt, pepper and Kelp Flakes
Bake the Pumpkin in the over for about 20-25 minutes on high heat. I use Coconut oil to bake with.
Then – place the mushrooms on a hotplate and get them lightly cooked first
Then add the rest of the ingredients.
When they are all lightly cooked place them in a dish with the Pumpkin and serve!
You can add Brown rice or Quinoa if you wish if especially hungry.
